Prepare the Ingredients

Wash and dry the mixed greens thoroughly. Slice the cucumber into thin rounds, and dice the red onion into small pieces.

Blister the Tomatoes

In a skillet over medium-high heat, add a drizzle of olive oil. Once hot, add the cherry tomatoes and cook for about 5-7 minutes until they blister and begin to soften. Remove from heat.

Assemble the Salad

In a large salad bowl, combine the mixed greens, blistered tomatoes, cucumber slices, and diced red onion. Tear the prosciutto into bite-sized pieces and add it to the salad.

Add Goat Cheese

Crumble the goat cheese over the top of the salad.

Make the Dressing

In a small bowl, whisk together the olive oil, balsamic vinegar, honey, salt, and black pepper until well combined.

Dress the Salad

Drizzle the dressing over the salad just before serving and toss gently to combine. Serve immediately.
