Pulled Pork Preparation
Prepare the Pork Shoulder
Rub the pork shoulder with the pork rub seasoning mixture, ensuring it is evenly coated. Place the seasoned pork in a slow cooker.
Cook the Pork
Add the apple cider vinegar, barbecue sauce, and water to the slow cooker. Cover and cook on low for 8 hours or until the pork is tender and easily shredded with a fork.
Shred the Pork
Once cooked, remove the pork from the slow cooker and shred it using two forks. Mix the shredded pork with the remaining barbecue sauce in the slow cooker.

Prepare the Baguette
Slice the French baguette in half lengthwise, creating a pocket for the filling.
Assemble the Bahn Mi
Spread mayonnaise on the inside of the baguette. Layer the pulled pork, followed by pickled carrots and daikon, chopped cilantro, and sliced jalapeños. Close the sandwich and cut it in half.
