    Prepare the Steak

    Season the 1855 NY strip steak with salt and black pepper. Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Once hot, add the steak and cook for about 3-4 minutes on each side, or until desired doneness. Remove from heat and let it rest before slicing it thinly against the grain.

    Make the Creamed Spinach

    In the same skillet, add another tablespoon of olive oil and minced garlic. Sauté for about 30 seconds until fragrant. Add the fresh spinach and cook until wilted. Lower the heat and pour in the heavy cream, stirring to combine. Add the Cambozola cheese and stir until melted and creamy. Season with salt and pepper to taste.

    Assemble the Sandwich

    Toast the slices of French bread if desired. Layer the thinly sliced steak on one slice of bread, top with the Cambozola creamed spinach, and then place the other slice of bread on top.

    Serve the steak sandwich with mixed greens on the side, drizzled with olive oil and a pinch of salt.
