Ravioli Preparation

Make the Dough
In a mixing bowl, combine the flour and eggs. Mix until a dough forms, then knead on a floured surface for about 10 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

Prepare the Filling
In a bowl, mix the smoked sweet corn, ricotta cheese, fennel powder, and lime zest until well combined. Season with salt and pepper to taste.

Roll Out the Dough
After resting, divide the dough into four pieces. Roll out each piece into thin sheets using a pasta machine or rolling pin.

Form the Ravioli
Place small dollops of the filling on one sheet of dough, leaving space in between. Moisten the edges of the dough with water, then cover with another sheet of dough, pressing to seal. Cut into squares or circles.

Cook the Ravioli
Bring a large pot of salted water to a boil. Gently add the ravioli and cook for about 3-4 minutes until they float to the surface. Remove with a slotted spoon.
