Caramelize the Onions
In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onions and a pinch of salt. Cook, stirring occasionally, until the onions are soft and caramelized, about 15-20 minutes.

Sauté the Sweet Peppers
In the same skillet, add another tablespoon of olive oil and the sweet bell peppers. Sauté until they are tender, about 5-7 minutes. Season with salt and pepper to taste.

Fry the Mortadella
In the same skillet, add the mortadella slices. Cook until they are golden brown and slightly crispy on both sides, about 2-3 minutes per side.

Assemble the Sandwich
On one slice of brioche, spread the house-made mustard. Layer on the fried mortadella, followed by caramelized onions, sautéed sweet peppers, and provolone cheese. Top with the second slice of brioche.

Serve the sandwich with mixed greens on the side, drizzled with olive oil and seasoned with salt and pepper.
