Method

Burnt Honey Preparation

  1. 1

    Make the Burnt Honey

In a small saucepan, heat the honey over medium heat. Stir occasionally until it begins to darken and bubble, about 5-7 minutes. Remove from heat and add butter, stirring until melted and fully incorporated.

Roasted Walnuts Preparation

  1. 2

    Roast the Walnuts

Preheat the oven to 180°C (350°F). Toss walnuts with olive oil and salt, then spread them onto a baking sheet. Roast for 10-12 minutes, or until golden and fragrant. Let cool.

Digestive Biscuits Preparation

  1. 3

    Make the Digestive Biscuits

In a bowl, combine crushed digestive biscuits, melted butter, brown sugar, flour, and baking powder. Mix until a dough forms. Roll into small balls and flatten slightly. Place on a baking sheet and bake at 180°C (350°F) for 10-12 minutes. Cool completely.

Assembly

  1. 4

    Assemble the Dish

Place a generous slice of D’Affinois double cream brie on a serving platter. Drizzle with burnt honey, scatter roasted walnuts on top, and serve with house-made digestive biscuits on the side.
