Prepare the Potatoes
Wash and peel the russet potatoes. Cut them into thick strips to form fries.

Fry the Potatoes
Heat the vegetable oil in a deep fryer or large pot to 350°F (175°C). Add the potato strips in batches, frying until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels, then sprinkle with salt.

Prepare the Sweet Potatoes
Wash and peel the sweet potatoes. Cut them into waffle shapes using a waffle fry cutter.

Toss the sweet potato waffle fries in cornstarch to coat. Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the sweet potato waffles in batches until crispy and golden, about 4-6 minutes. Drain on paper towels and sprinkle with salt.
