Cheese Dip Preparation

Prepare the Base
In a mixing bowl, blend the cream cheese until smooth. This will be the base of your cheese dip.

Mix in the Cheeses
Add the shredded sharp cheddar cheese and Monterey Jack cheese to the cream cheese. Mix well until all cheeses are combined.

Add Sour Cream and Tomatoes
Stir in the sour cream and the can of diced tomatoes with green chilies. Make sure to mix until everything is well incorporated.

Season the Dip
Add chopped green onions, garlic powder, cumin, salt, and black pepper. Adjust the seasoning to taste. Mix everything together until evenly combined.

Heat the Dip
Transfer the mixture to a baking dish and bake in a preheated oven at 350°F (175°C) for 20-25 minutes or until bubbly and golden on top.

Prepare the Tortillas
Cut each corn tortilla into 6 triangles to create chips.

Heat the Oil
In a large skillet, heat the vegetable oil over medium-high heat until hot but not smoking.

Fry the Chips
Carefully add a handful of tortilla triangles to the hot oil. Fry until they are golden and crispy, about 2-3 minutes, turning occasionally.

Drain and Season
Using a slotted spoon, remove the chips from the oil and place them on paper towels to drain. Sprinkle with salt to taste while they are still hot.
