Pulled Pork Tacos

In a slow cooker, place the pork shoulder and cover it with barbecue sauce. Cook on low for 8 hours or until the pork is tender and can be easily shredded.

Once the pork is shredded, warm the taco tortillas. Fill each tortilla with pulled pork, sprinkle with fresh cilantro, and serve with lime wedges.
Grilled Chicken Tacos

Grill the Chicken
Season chicken breasts with taco seasoning and grill over medium-high heat for 6-7 minutes on each side or until fully cooked. Let rest and then slice.

Warm the taco tortillas and fill each with sliced grilled chicken, shredded lettuce, and diced tomatoes.
Tamales

Prepare the Dough
In a large mixing bowl, combine masa harina and chicken broth to form a dough. Mix until smooth and pliable.

Fill and Wrap Tamales
Soak corn husks in warm water for 30 minutes. Spread masa dough on each husk, add filling, and fold the husk to enclose the filling. Steam tamales for about 1 hour.

In a medium saucepan, combine cream cheese, cheddar cheese, salsa, and jalapeños. Cook over medium heat until melted and smooth.

In a large pot over medium heat, brown the ground beef. Add chopped onions and cook until softened. Stir in kidney beans, diced tomatoes, and chili powder. Simmer for 30 minutes.

In a small saucepan, combine vinegar, water, sugar, and salt. Bring to a boil. Pour over sliced jalapeños in a jar. Let cool and refrigerate for at least 24 hours.

In a mixing bowl, mash the ripe avocados. Add lime juice, chopped onion, chopped cilantro, and salt. Mix until combined.
