Pulled Pork Preparation

    Prepare the Rub

    In a bowl, combine smoked paprika, brown sugar, salt, black pepper, garlic powder, onion powder, and cayenne pepper. Mix well.

    Season the Pork

    Rub the spice mix all over the pork shoulder, ensuring it's well coated. Let it sit for at least one hour or overnight in the refrigerator for best results.

    Smoke the Pork

    Preheat your smoker to 225°F (107°C). Place the pork shoulder in the smoker and smoke for about 6-8 hours, or until the internal temperature reaches 195°F (90°C).

    Rest and Pull

    Once smoked, remove the pork from the smoker, wrap it in foil, and let it rest for at least 30 minutes. After resting, shred the pork using two forks.

Delta-Q Sauce Preparation

    Combine Ingredients

    In a saucepan, combine ketchup, apple cider vinegar, brown sugar, Worcestershire sauce, smoked paprika, garlic powder, salt, and black pepper.

    Cook the Sauce

    Bring the mixture to a simmer over medium heat, stirring occasionally. Cook for about 15 minutes until slightly thickened. Set aside.

Tomato-Jalapeño Marmalade Preparation

    Cook the Marmalade

    In a saucepan, combine diced tomatoes, diced jalapeños, sugar, and lemon juice. Cook over medium heat for about 20-25 minutes, stirring frequently until the mixture thickens.

    Remove from heat and let it cool before storing in a jar. This can be made ahead of time and refrigerated.

Citrus Slaw Preparation

    Mix the Slaw

    In a large bowl, combine shredded cabbage, shredded carrot, chopped cilantro, lime juice, olive oil, and salt. Toss well to combine.

Taco Assembly

    Heat flour tortillas in a dry skillet over medium heat for about 30 seconds on each side until warm and pliable.

    On each tortilla, add a generous portion of pulled pork, drizzle with Delta-Q sauce, and top with tomato-jalapeño marmalade, sliced fresh jalapeños, and citrus slaw.
