    Prepare Ingredients

    Gather all the ingredients and have them ready before starting to cook. Slice the jalapeños and chop the cilantro.

Cooking

    Heat the Tortilla Chips

    In a large skillet over medium heat, add the tortilla chips. Pour the Hatch green chile sauce evenly over the chips, allowing them to heat through and become slightly crispy, about 3-5 minutes.

    Cook the Eggs

    While the chips are heating, in a separate non-stick frying pan, cook the eggs sunny-side up. Heat the pan over medium-low heat and crack the eggs into the pan, cooking until the whites are set but the yolks are still runny, approximately 3-4 minutes.

    Assemble the Skillet

    Once the chips are heated and the eggs are cooked, remove the skillet from the heat. Sprinkle the shredded jack cheese and queso fresco over the top of the chips. Carefully place the sunny-side up eggs on top.

    Add Final Touches

    Top with fresh jalapeño slices and chopped cilantro. Drizzle with Cholula hot sauce to taste.

Serving

    Serve the skillet chilaquiles warm, garnished with additional cilantro and hot sauce if desired.
