Preparation of Ingredients

  1. 1

    Prepare the Shrimp

Rinse the shrimp under cold water, then pat dry with paper towels. Season with salt, black pepper, and red pepper flakes. Set aside.

  2. 2

    Chop the Vegetables

Dice the bell pepper and red onion into small pieces. Mince the garlic cloves.

  3. 3

    Prepare the Pineapple

If using fresh pineapple, peel and cut it into chunks. If using canned, drain the pineapple chunks.

Cooking Directions

  1. 4

    Make the Sauce

In a small bowl, whisk together soy sauce, honey, rice vinegar, cornstarch, and water until smooth. Set aside.

  2. 5

    Stir-fry the Vegetables

Heat a large skillet or wok over medium-high heat. Add a tablespoon of oil. Once hot, add the diced bell pepper and red onion. Stir-fry for about 3-4 minutes until they begin to soften.

  3. 6

    Add Garlic and Shrimp

Add the minced garlic and seasoned shrimp to the skillet. Cook for about 2-3 minutes until the shrimp turns pink and opaque.

  4. 7

    Add Pineapple and Sauce

Add the pineapple chunks to the skillet, then pour the prepared sauce over the top. Stir well to combine.

  5. 8

    Simmer

Reduce heat to medium-low and let the mixture simmer for 3-5 minutes until the sauce thickens and coats the shrimp and vegetables.

  6. 9

    Serve

Remove from heat and serve hot over rice or noodles if desired.
