Dough Preparation

    Mix Dry Ingredients

    In a large mixing bowl, combine the all-purpose flour, baking powder, and salt. Whisk together until well mixed.

    Add Shortening

    Add the vegetable shortening to the flour mixture. Use your fingers or a pastry cutter to mix until the mixture resembles coarse crumbs.

    Add Water

    Gradually add warm water to the mixture, stirring until a soft dough forms. You may not need all the water, so add it slowly.

    Knead Dough

    Turn the dough out onto a floured surface and knead gently for about 2-3 minutes until smooth.

    Rest Dough

    Cover the dough with a clean kitchen towel and let it rest for about 30 minutes at room temperature.

Frying Sopapillas

    Heat Oil

    In a deep frying pan or pot, heat oil over medium-high heat to about 375°F (190°C). You can test the temperature by dropping a small piece of dough into the oil; it should sizzle.

    Roll Out Dough

    On a lightly floured surface, roll out the rested dough to about 1/8 inch thick. Cut into squares or triangles, about 3 inches in size.

    Fry Sopapillas

    Carefully drop a few pieces of dough into the hot oil. Fry until they puff up and turn golden brown, about 2-3 minutes per side. Remove with a slotted spoon and drain on paper towels.

Topping and Serving

    Prepare Cinnamon Sugar

    In a small bowl, mix together granulated sugar and ground cinnamon until well combined.

    Toss Sopapillas

    While the sopapillas are still warm, toss them in the cinnamon sugar mixture until well coated.

    Drizzle honey over the coated sopapillas and serve warm with scoops of vanilla ice cream.
