Rice and Vegetables

Method

Preparation

  1. 1

    Prepare the Ingredients

Dice the green chiles and tomatoes, finely chop the onion, and mince the garlic.

Cooking

  1. 2

    Sauté the Vegetables

In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and continue to sauté for an additional 1-2 minutes until fragrant.

  2. 3

    Add Chiles and Tomatoes

Stir in the diced green chiles and tomatoes. Cook for 2-3 minutes, allowing the mixture to simmer and blend the flavors.

  3. 4

    Add Rice and Broth

Add the long-grain white rice, vegetable broth (or water), cumin, salt, and black pepper to the saucepan. Stir to combine all the ingredients.

  4. 5

    Cook the Rice

Bring the mixture to a boil over high heat. Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for 15-20 minutes or until the rice is tender and the liquid is absorbed.

  5. 6

    Fluff and Serve

Remove the saucepan from the heat. Let it sit covered for 5 minutes. Then, fluff the rice with a fork and garnish with chopped cilantro before serving.
