For the Fried Shrimp

In a mixing bowl, combine the all-purpose flour, cornstarch, cajun seasoning, salt, and black pepper. Mix well.

Coat the Shrimp
Dip each shrimp into the buttermilk, allowing excess to drip off, then coat in the flour mixture. Ensure all sides are well coated.

Fry the Shrimp
In a large skillet, heat the vegetable oil over medium-high heat. Once hot, fry the shrimp in batches for 2-3 minutes, or until golden brown and cooked through. Remove and drain on paper towels.
For the Citrus Slaw

In a large bowl, combine the shredded cabbage, grated carrot, orange juice, lime juice, honey, salt, and black pepper. Toss well to combine.

Chill the Slaw
Cover and refrigerate the slaw for at least 30 minutes to let the flavors meld together.
For the Pico de Gallo

Combine Ingredients
In a medium bowl, combine the diced tomatoes, red onion, chopped cilantro, lime juice, minced jalapeño, and salt. Mix gently.

Allow the Pico de Gallo to sit for about 15 minutes to enhance the flavors.
For the Remoulade Sauce

Mix the Sauce
In a bowl, combine the mayonnaise, Dijon mustard, Worcestershire sauce, hot sauce, minced garlic, paprika, and salt. Stir until smooth.

Refrigerate the remoulade sauce until ready to use.
To Assemble the Tacos

Warm the Tortillas
In a dry skillet, warm the flour tortillas over medium heat for about 20-30 seconds on each side.

On each tortilla, layer the fried shrimp, citrus slaw, pico de gallo, a drizzle of remoulade sauce, pickled onions, and pickled green tomatoes. Garnish with fresh cilantro and jalapeños.
