Method

Prepare Proteins

    Grilled Chicken

    Season chicken with salt and pepper, then grill over medium heat until fully cooked, about 6-7 minutes per side. Slice into strips.

    Season ribeye steak with salt and pepper. Grill or pan-sear over high heat for 4-5 minutes per side for medium-rare. Let rest before slicing.

    Braised Ground Beef

    In a skillet, cook ground beef over medium heat until browned. Drain excess fat and season with taco seasoning. Cook for an additional 5 minutes.

    House-Smoked Pulled Pork

    Smoke pork shoulder until tender, about 8 hours at 225°F. Pull apart using forks and mix with BBQ sauce if desired.

    Sauté corn and diced zucchini in a skillet with a little olive oil until tender, about 5-7 minutes.

    Slice bell peppers and onion. In a large skillet, heat olive oil over medium-high heat. Add veggies, salt, and pepper, and sauté for 5-7 minutes until tender and slightly caramelized.

Prepare House-made Tortillas

    In a bowl, mix flour, baking powder, and salt. Cut in lard or oil, then add warm water gradually until a dough forms. Divide into balls, roll out into circles, and cook on a hot skillet for 30 seconds on each side.

Assemble Taco Fiesta

    On a large platter, arrange grilled chicken, ribeye, ground beef, pulled pork, and corn & zucchini. Serve with sautéed fajita veggies, cheese, sour cream, pico de gallo, guacamole, and lettuce. Provide sides of refried beans and Spanish rice. Serve with warm tortillas for guests to build their own tacos.
