Method

Preparation

  1. 1

    Marinate the Meat

In a bowl, combine the chicken breasts and steak with olive oil, chili powder, cumin, garlic powder, lime juice, salt, and black pepper. Ensure the meat is well-coated. Cover and let it marinate for at least 30 minutes in the refrigerator.

  2. 2

    Prepare the Vegetables

While the meat is marinating, slice the bell peppers and onion into thin strips.

Cooking

  1. 3

    Grill the Meat

Preheat the grill to medium-high heat. Remove the marinated chicken and steak from the refrigerator. Grill the chicken for about 6-7 minutes per side until fully cooked (internal temperature of 165°F). Grill the steak for about 4-5 minutes per side for medium-rare, adjusting to your desired doneness. Once cooked, let the meat rest for 5 minutes before slicing.

  2. 4

    Sauté the Vegetables

In a skillet over medium heat, add a tablespoon of olive oil. Once hot, add the sliced bell peppers and onions. Sauté for about 5-7 minutes until the vegetables are tender and slightly charred. Add salt and pepper to taste.

Assembly

  1. 5

    Warm the Tortillas

While the vegetables are cooking, warm the flour tortillas in a separate skillet or microwave for about 30 seconds until soft and pliable.

  2. 6

    Serve the Fajita Bar

Slice the grilled chicken and steak into strips. Arrange the sliced meat, sautéed vegetables, and optional toppings (sour cream, shredded cheese, guacamole, and cilantro) on a serving platter. Allow guests to assemble their own fajitas by placing the desired ingredients onto a warm tortilla.
