Method

Prepare the Filling

    Cook the Beef

    In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it apart with a spoon, about 5-7 minutes.

    Add the chopped onion and minced garlic to the skillet. Sauté until the onions are translucent, about 3-4 minutes.

    Season the Mixture

    Stir in chili powder, cumin, salt, and black pepper. Cook for an additional 2 minutes to let the flavors meld.

    Add Refried Beans

    Mix in the refried beans until well combined. Set aside to cool slightly.

    Once the mixture has cooled slightly, stir in 1 cup of shredded cheese.

Make the Sauce

    Combine Sauce Ingredients

    In a saucepan, mix together the tomato sauce, chili powder, cumin, garlic powder, salt, and water.

    Simmer the Sauce

    Bring the mixture to a simmer over medium heat, stirring occasionally. Let it simmer for 10 minutes to develop the flavor.

Assemble the Enchiladas

    Prepare Tortillas

    Warm the corn tortillas in a skillet or microwave until pliable, about 30 seconds.

    Fill the Tortillas

    Spoon about 2-3 tablespoons of the beef mixture onto each tortilla. Roll it up tightly and place seam side down in a baking dish.

    Add Sauce

    Pour half of the enchilada sauce over the rolled tortillas in the baking dish, ensuring they are well coated.

    Sprinkle Cheese

    Top the enchiladas with the remaining shredded cheese.

    Preheat your oven to 350°F (175°C).

    Cover the baking dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.

    Prepare the Spanish rice according to package instructions.

    Mash avocados and mix with lime juice, salt, and other desired ingredients for guacamole.
