Steak Preparation

    Marinate the Steak

    In a small bowl, combine olive oil, salt, black pepper, and garlic powder. Rub the mixture all over the ribeye steak and let it marinate for at least 30 minutes.

    Chargrill the Steak

    Preheat your grill to medium-high heat. Place the marinated ribeye steak on the grill. Cook for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from the grill and let it rest for 5 minutes before slicing thinly.

Pico de Gallo Preparation

    Make the Pico de Gallo

    In a medium bowl, combine diced tomatoes, red onion, cilantro, lime juice, and salt. Mix well and set aside to let the flavors meld.

Guacamole Preparation

    Prepare the Guacamole

    In a bowl, mash together the ripe avocados, lime juice, salt, and minced garlic until smooth. Adjust seasoning to taste and set aside.

Pickled Red Onion Preparation

    Pickle the Onion

    In a small saucepan, combine apple cider vinegar, sugar, and salt. Bring to a simmer, stirring until sugar dissolves. Pour over the thinly sliced red onion in a bowl and let it sit for at least 30 minutes.

Taco Assembly

    Assemble the Tacos

    Warm the flour tortillas in a skillet or microwave. Layer the sliced steak, shredded Jack and Cheddar cheese, pico de gallo, guacamole, pickled red onion, and a dollop of sour cream on each tortilla. Garnish with fresh cilantro.
