For the Chargrilled Corn Ribs

Prepare the Corn
Using a sharp knife, cut the kernels off the cob in long strips to create 'ribs'. This can be done by standing the corn upright and slicing downward along the ear.

Season the Corn Ribs
In a large bowl, mix the corn ribs with olive oil, salt, and black pepper until they are evenly coated.

Add Toppings
Once the corn ribs are done grilling, remove them from the grill. Sprinkle the corn ribs with crumbled queso fresco, finely chopped cilantro, and diced jalapeño. Squeeze fresh lime juice over the top.

Make the Dipping Sauce
In a medium bowl, combine mayonnaise, apple cider vinegar, honey, Dijon mustard, salt, and black pepper. Whisk together until smooth and well combined.

Transfer the white BBQ dipping sauce to a small serving bowl and serve alongside the chargrilled corn ribs.
