Calamari Preparation

Prepare the Calamari
Rinse the calamari rings under cold water and pat dry with paper towels.

Make the Breading
In a large bowl, combine flour, cornstarch, salt, black pepper, and garlic powder. Mix well.

Coat the Calamari
Dip each calamari ring first into the egg mixture, then dredge in the flour mixture, ensuring they are well coated.
Frying

Heat the Oil
In a deep frying pan or pot, heat vegetable oil over medium-high heat until it reaches 180°C (350°F).

Fry the Calamari
Working in batches, carefully add the coated calamari rings to the hot oil. Fry for 2-3 minutes or until golden brown and crispy.

Drain the Calamari
Remove the fried calamari from the oil and place them on a plate lined with paper towels to drain excess oil.
Marinara Sauce Preparation

Sauté the Garlic
In a saucepan, heat olive oil over medium heat. Add minced garlic cloves and sauté until fragrant, about 1 minute.

Add the Tomatoes
Stir in the canned crushed tomatoes, oregano, salt, and black pepper. Bring to a simmer.

Simmer the Sauce
Let the sauce simmer for about 15-20 minutes, stirring occasionally until thickened.

Stir in fresh basil leaves just before serving.
