Prepare the Rice

Cook the Rice

Rinse the jasmine rice under cold water until the water runs clear. In a pot, combine the rinsed rice and water, bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until rice is cooked and water is absorbed. Remove from heat and let it sit covered for an additional 10 minutes.

Prepare the Vegetables and Protein

Chop and Prepare

While the rice is cooking, chop the carrot, bell pepper, and green onion. If using chicken or shrimp, dice or peel them accordingly. If using tofu, cut it into cubes.

Cook the Fried Rice

Stir-fry

In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the protein of your choice and cook until fully cooked through, about 5-7 minutes. Remove from skillet and set aside.

Sauté Vegetables

In the same skillet, add a bit more oil if needed, then add the minced garlic and sauté for about 30 seconds. Add the chopped carrot, bell pepper, and green peas. Stir-fry for about 3-4 minutes until vegetables are tender.

Combine Ingredients

Add the cooked rice to the vegetable mixture, then add the cooked protein back into the skillet. Pour in the soy sauce and sesame oil, stirring everything together to combine well. Season with salt and black pepper to taste.

Add Eggs

Make a well in the center of the rice mixture, pour in the beaten eggs, and scramble them until fully cooked, then mix everything together.

Serve

Plate and Enjoy

Remove the skillet from heat and serve the fried rice hot, garnished with chopped green onions if desired.
