Prepare the Chiles
Remove the stems and seeds from the dried ancho, guajillo, and pasilla chiles. Rinse them briefly under cold water.

Soak the Chiles
Place the chiles in a bowl and cover with hot water. Let them soak for about 15-20 minutes until soft.
Cooking the Base

Sauté the Vegetables
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion, minced garlic, and diced bell pepper. Cook for about 5-7 minutes until the onion is translucent.

Add the diced tomatoes and cook for another 5 minutes, stirring occasionally.
Cooking the Chiles and Meat

Drain the soaked chiles and add them to a blender with a little bit of the soaking water. Blend until smooth.

In the same skillet, add the chicken thighs and chorizo. Cook until the chicken is browned on all sides and the chorizo is cooked through, about 10 minutes.
