Prepare the Chicken
If using raw chicken, season the chicken cutlets with salt and pepper. Dip each cutlet into flour, then into beaten eggs, and finally coat them with breadcrumbs. Heat oil in a frying pan over medium heat and fry the cutlets for about 4-5 minutes on each side until golden brown and cooked through. Remove and drain on paper towels.

Prepare the Refried Beans
If using canned refried beans, heat them in a small saucepan over medium heat until warmed through. If making from scratch, mash cooked pinto beans with a bit of oil, salt, and cumin until smooth.

Prepare the Guacamole
In a bowl, mash ripe avocados with lime juice, salt, diced tomatoes, and chopped cilantro until you reach your desired consistency.

Prepare the French Fries
Fry or bake the French fries according to the package instructions or your preferred method until crispy.
Assembling the Torta

Spread a layer of refried beans on the bottom half of each toasted telera roll.

Place a breaded chicken cutlet on top of the beans.

Add a generous amount of guacamole over the chicken cutlet.

Sprinkle pickled onions and shredded Monterey cheese on top of the guacamole.

Drizzle chipotle mayo over the cheese, then close the sandwich with the top half of the telera roll.

Serve the torta with a side of hot French fries.
