Prepare the Enchiladas
Heat the red enchilada sauce in a saucepan. Soften the corn tortillas in a separate pan or microwave. Dip each tortilla in the sauce, fill with shredded cheese, roll them up, and place them in a baking dish.

Bake the Enchiladas
Pour the remaining enchilada sauce over the rolled tortillas and sprinkle additional cheese on top. Bake in a preheated oven at 350°F (175°C) for 15-20 minutes until the cheese is melted and bubbly.

Prepare Rajas
Char the poblano peppers over the grill or on a stovetop until the skin is blistered. Remove the skin, seeds, and slice them into strips. Slice the onion thinly.

In a pot, prepare the Mexican rice according to package instructions or your preferred recipe.

In a small saucepan, heat the black beans over medium heat until warm, stirring occasionally.

Plate the Tampequeña
On a large plate, serve a portion of sliced skirt steak alongside a baked enchilada, grilled queso fresco, sautéed rajas, Mexican rice, and black beans. Garnish with chopped cilantro and a side of guacamole. Serve with warm corn tortillas.
