Four small masa boats – two topped with chicken, mole & queso plus two more topped with Fat Rosie’s beef, queso dip & chopped cilantro.

Method
Prepare Masa Boats

Mix Masa Dough
In a large bowl, combine masa harina, warm water, and salt. Mix until a smooth dough forms.

Form Sopes
Divide the dough into 8 equal portions. Roll each portion into a ball, then flatten to form small discs about 4 inches wide and 0.5 inches thick. Create a slight rim around the edges to hold the toppings.

Cook Sopes
Heat a skillet over medium heat. Cook each masa disc for about 2-3 minutes on each side until lightly golden and cooked through. Remove from heat and set aside.
Prepare Chicken Topping

Combine Chicken and Mole
In a saucepan, heat the cooked shredded chicken over medium heat. Stir in the mole sauce and let simmer for 5 minutes until heated through.

Prepare Queso
Crumble queso fresco and set aside for topping.

Assemble Sopes

Top Sopes
On two of the masa boats, spoon the chicken and mole mixture, then sprinkle with crumbled queso fresco. On the other two, add the ground beef and drizzle with warm queso dip. Garnish with chopped cilantro.
