Preparing the Beans

    Soaking the Beans

    Rinse the pinto beans under cold water to remove any dirt or debris. Place the beans in a large bowl and cover them with water. Let them soak overnight or for at least 8 hours.

    Drain and rinse the soaked beans. In a large pot, combine the beans and 6 cups of water. Bring to a boil over medium-high heat, then reduce the heat to low. Cover the pot and simmer for about 1.5 to 2 hours, or until the beans are tender. Add 1 teaspoon of salt during the last 30 minutes of cooking. Once cooked, drain the beans, reserving some of the cooking liquid.

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the finely chopped onion and sauté for about 5 minutes, or until the onion is translucent.

    Add the minced garlic, cumin powder, and black pepper to the skillet. Sauté for an additional 1-2 minutes until fragrant.

    Add the cooked beans to the skillet and mix well with the onion and spices. Using a potato masher or the back of a fork, mash the beans to your desired consistency, adding reserved cooking liquid as needed to reach your preferred texture.

    Stir in the lime juice and adjust seasoning with additional salt or pepper to taste. Cook for another 5 minutes on low heat, stirring occasionally.
