    Prep the Vegetables

    Remove the stems and seeds from the poblano peppers. Dice the peppers, onion, and mince the garlic.

    Grate the Cheese

    Grate both the Monterey Jack and Chihuahua cheese and set aside.

    Sauté the Vegetables

    In a skillet, heat the olive oil over medium heat. Add the diced poblano peppers and onions. Sauté for about 5-7 minutes until they soften. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.

    Add the Cheese

    Reduce the heat to low. Add the grated cheeses to the skillet with the sautéed vegetables. Stir until the cheese is completely melted and combined, about 3-5 minutes.

    Season the Mixture

    Season with salt and black pepper to taste. Stir in half of the fresh cilantro.

Serving

    Serve

    Transfer the queso fundido to a serving dish and garnish with the remaining cilantro. Serve immediately with tortilla chips for dipping.
