    Prepare the Guajillo Peppers

    Remove the stems and seeds from the guajillo peppers. Rinse them under cold water and set aside.

    Cook the Chicken

    In a large pot, add the chicken pieces and cover with chicken broth. Bring to a boil and then reduce the heat to a simmer. Cook for about 30 minutes, or until the chicken is fully cooked.

Making the Pozole

    Blend the Peppers

    In a blender, combine the cooked guajillo peppers with 1 cup of the chicken broth from the pot. Blend until smooth.

    Add to the Soup

    Once the chicken is cooked, remove it from the pot and let it cool slightly. Shred the chicken, discarding the skin and bones. Add the blended guajillo pepper mixture back into the pot along with the shredded chicken, hominy, minced garlic, chopped onion, salt, and black pepper.

    Simmer the Pozole

    Simmer the soup for an additional 15-20 minutes, allowing the flavors to meld.

Serving

    Garnish and Serve

    Ladle the pozole into bowls and top with shredded cabbage, sliced radishes, avocado slices, a sprinkle of fresh cilantro, and a wedge of lime. Serve hot.
