Method

Grilled Chicken

  1. 1

    Prepare the Chicken

In a bowl, mix olive oil, garlic powder, paprika, salt, and black pepper. Rub this mixture over the chicken breasts.

  2. 2

    Grill the Chicken

Preheat the grill over medium-high heat. Grill the chicken for about 6-7 minutes on each side or until fully cooked. Remove from the grill and let it rest.

Chipotle Sauce

  1. 3

    Blend the Sauce

In a blender, combine the chipotle peppers, heavy cream, chicken broth, lime juice, cilantro, and salt. Blend until smooth.

  2. 4

    Heat the Sauce

Pour the blended sauce into a saucepan and heat over medium heat for about 5-7 minutes, stirring occasionally, until warmed through.

Crispy Onions

  1. 5

    Prepare the Onions

Slice the onion into thin rings and soak them in cold water for about 30 minutes.

  2. 6

    Coat the Onions

In a bowl, mix flour and salt. Drain the onions and coat them in the flour mixture.

  3. 7

    Fry the Onions

In a deep skillet, heat oil over medium heat. Fry the coated onions until golden brown and crispy. Remove and drain on paper towels.

Grilled Zucchini

  1. 8

    Prepare the Zucchini

Slice the zucchini into thick rounds. Toss them with olive oil, salt, and black pepper.

  2. 9

    Grill the Zucchini

Grill the zucchini for about 3-4 minutes on each side until tender and slightly charred.

Garlic Mashed Potatoes

  1. 10

    Boil the Potatoes

Peel and chop the potatoes into chunks. Boil them in salted water until tender, about 15-20 minutes.

  2. 11

    Prepare the Garlic

In the last 5 minutes of boiling, add the peeled garlic cloves to the pot.

  3. 12

    Mash the Potatoes

Drain the potatoes and garlic. Mash them together, then mix in butter, heavy cream, and salt until smooth and creamy.
