Prepare Grilled Pineapple

    Grill the Pineapple

    Preheat your grill to medium-high heat. Cut the fresh pineapple into rings or wedges. In a bowl, mix the brown sugar and cinnamon together. Coat the pineapple pieces with the sugar mixture.

    Cook the Pineapple

    Place the coated pineapple on the grill and cook for about 3-4 minutes on each side, or until grill marks appear and the pineapple is caramelized. Remove from grill and let cool.

    Smash the Pineapple

    Once cooled, chop the grilled pineapple into small pieces and mash lightly with a fork. Set aside.

Prepare the Margarita

    Prepare the Glass

    Rub the rim of a glass with a lime wedge to moisten it. Dip the rim into Tajín seasoning to coat it evenly.

    Mix the Ingredients

    In a cocktail shaker, combine the tequila, lime juice, triple sec, and agave syrup. Add ice and shake vigorously for about 15-20 seconds until well chilled.

    Assemble the Drink

    Strain the margarita mixture into the prepared glass over fresh ice. Spoon the smashed grilled pineapple on top of the margarita.
