Cook the Egg
In a small frying pan, heat a little butter over medium heat. Crack the egg into the pan and cook until the whites are set and the yolk is at your desired doneness, about 3-4 minutes for sunny-side up. Remove from heat and set aside.
Pancake or French Toast

Prepare the Pancake Batter
In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt. In a separate bowl, beat together the milk, egg, and vanilla extract. Pour the wet ingredients into the dry ingredients and mix until just combined.

Cook the Pancake
Heat a non-stick skillet over medium heat and add a tablespoon of butter. Pour 1/4 cup of batter into the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook for an additional 1-2 minutes until golden brown.

Prepare French Toast (Optional)
If making French toast instead, whisk together the egg and 1/4 cup milk in a shallow dish. Dip each slice of bread into the mixture, allowing it to soak for a moment. Heat a skillet over medium heat and melt a tablespoon of butter. Cook the bread for 2-3 minutes per side until golden brown.
