    Prepare the Tostadas

    Place the tostadas on a serving plate and set aside.

    Cook the Eggs

    In a non-stick skillet, heat a small amount of oil over medium heat. Crack the eggs into the skillet and cook to your desired doneness (sunny side up or over easy).

    Assemble the Dish

    On each tostada, place a cooked egg, then drizzle salsa verde generously over the top. Crumble queso fresco on top, add slices of fried plantains, a dollop of crema, and garnish with cilantro.

    Prepare the Potatoes

    Wash and peel the potatoes. Cut them into small cubes.

    Cook the Potatoes

    In a large skillet, heat olive oil over medium-high heat. Add the cubed potatoes, salt, black pepper, paprika, and garlic powder. Stir to coat the potatoes in the seasonings.

    Fry the Potatoes

    Cook the potatoes for about 15-20 minutes, stirring occasionally, until they are golden brown and crispy on the outside and tender on the inside.
