Preparation

  1. 1

    Prepare the Chiles

Remove the stems and seeds from the dried chiles. Heat a skillet over medium heat and toast the chiles for about 2-3 minutes until fragrant. Be careful not to burn them.

  2. 2

    Soak the Chiles

Place the toasted chiles in a bowl and cover them with hot water. Let them soak for about 20 minutes until they are soft.

  3. 3

    Chop Vegetables

Finely chop the onion, garlic, and tomato.

Cooking the Mole

  1. 4

    Sauté Onions and Garlic

In a large pot, heat a tablespoon of oil over medium heat. Add the chopped onion and garlic, sautéing until the onion is translucent.

  2. 5

    Add Tomato

Add the chopped tomato to the pot and cook for an additional 5 minutes until the tomato softens.

  3. 6

    Blend the Chiles

Drain the soaked chiles and add them to a blender along with the sautéed mixture, broth, and water. Blend until smooth.

  4. 7

    Cook the Mole

Pour the blended mixture back into the pot. Add the ground cumin, cinnamon, black pepper, and salt. Bring to a simmer and cook for 30-40 minutes, stirring occasionally.

  5. 8

    Add Other Ingredients

Add the unsweetened chocolate, peanut butter, sesame seeds, and raisins to the pot. Stir until the chocolate is melted and the ingredients are well combined.
