Preheat the Oven
Preheat your oven to 400°F (200°C).

Roast the Corn
Place the prepared corn cobs on a baking sheet and roast in the preheated oven for about 25-30 minutes, turning occasionally, until the corn is tender and slightly charred.
Dressing Preparation

Mix the Dressing
In a mixing bowl, combine the guajillo chili powder, lime juice, and mayonnaise. Stir until well blended.

Add Cheese and Seasoning
Fold in the Cotija cheese and Tajín® seasoning into the dressing mixture.
Assembly

Combine Corn and Dressing
Once the corn is roasted, let it cool slightly, then cut the kernels off the cob and place them in a large bowl.

Toss to Coat
Pour the dressing over the corn kernels and toss to coat evenly. Adjust seasoning with additional Tajín® if desired.

Serve
Serve the Mexican Street Corn immediately, garnished with extra Cotija cheese and a sprinkle of Tajín® on top.
