Marinade and Seasoning

Method

Preparation of Proteins

  1. 1

    Marinate the Salmon

In a bowl, mix together 2 tablespoons of olive oil, minced garlic, lime juice, cumin, paprika, salt, and black pepper. Coat the salmon fillets in the marinade and let them sit for at least 30 minutes.

  2. 2

    Season the Shrimp

In a separate bowl, toss the shrimp with 1 tablespoon of olive oil, minced garlic, lime juice, and a pinch of salt and pepper. Set aside to marinate.

  3. 3

    Prepare the Skirt Steak

Rub the skirt steak with the remaining olive oil, salt, and black pepper. Allow it to sit at room temperature for about 20 minutes before grilling.

Cooking

  1. 4

    Grill the Salmon

Preheat the grill to medium-high heat. Place the marinated salmon fillets on the grill and cook for about 4-5 minutes on each side, or until the fish is flaky and cooked through.

  2. 5

    Grill the Shrimp

Skewer the marinated shrimp and grill them for about 2-3 minutes on each side until they turn pink and opaque.

  3. 6

    Grill the Skirt Steak

Place the skirt steak on the grill and cook for about 4-5 minutes on each side for medium-rare, depending on thickness. Let it rest for 5 minutes before slicing.

Serving

  1. 7

On two plates, serve the grilled salmon, shrimp, and sliced skirt steak alongside a serving of Mexican rice, charro beans, and guacamole. Enjoy!
