Prepare the Jalapenos
Preheat your oven to 375°F (190°C). Slice the jalapenos in half lengthwise and remove the seeds and membranes using a spoon for a milder flavor. Set aside.

Cook the Chorizo
In a skillet over medium heat, add the chorizo. Cook until browned and fully cooked, about 5-7 minutes, breaking it apart with a spatula as it cooks. Drain excess fat if necessary.

Stuff the Jalapenos
Using a spoon, fill each jalapeno half with the chorizo and cheese mixture. Place them on a baking sheet lined with parchment paper.

Add Cheese Topping
Sprinkle the remaining 0.5 cup of Chihuahua cheese over the stuffed jalapenos.

Bake
Bake in the preheated oven for 15-20 minutes, or until the jalapenos are tender and the cheese is bubbly and golden brown.

Plate and Garnish
Remove the jalapenos from the oven and let them cool slightly. Serve warm, drizzled with black bean sauce, guacamole, and sour cream.
