    Prepare the Plantains

    Peel the plantain and cut it into 1-inch thick slices. In a skillet over medium heat, add olive oil and fry the plantain slices until golden brown on both sides. Remove and drain on paper towels.

    Cook the Eggs

    In the same skillet, crack the eggs and cook them sunny-side up or to your desired doneness. Season with salt and pepper.

    Assemble the Dish

    On each tostada, add a layer of salsa verde. Place one cooked egg on top of each tostada, followed by crumbled queso fresco. Top with fried plantains, a drizzle of crema, and sprinkle with chopped cilantro.

    Prepare the Potatoes

    Wash and cube the potatoes into small pieces. In a pot, cover the potatoes with water and bring to a boil. Cook until tender, about 10 minutes. Drain and set aside.

    Sauté the Potatoes

    In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, and sauté until fragrant. Add the boiled potatoes, paprika, salt, and black pepper. Cook until the potatoes are crispy and golden, about 10-15 minutes.
