Prepare the Tres Chiles Salsa

    Roast the Ingredients

    In a skillet over medium heat, roast the tomatillos, jalapeño, poblano pepper, garlic, and onion until they are charred and softened, about 10 minutes.

    Blend the Salsa

    Remove the roasted ingredients from the heat and let cool slightly. Once cooled, transfer to a blender, add cilantro, lime juice, and salt. Blend until smooth and set aside.

Prepare the Flautas

    Fill the Tortillas

    Heat the corn tortillas in a dry skillet until pliable, about 30 seconds on each side. On each tortilla, place about 1/3 cup of shredded chicken or beef. Roll tightly and secure with a toothpick if necessary.

    Fry the Flautas

    In a large pan, heat vegetable oil over medium-high heat. Once hot, carefully add the rolled tortillas, seam side down, and fry until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.

Serve the Flautas

    Assemble the Dish

    On a serving plate, place the crispy flautas. Top with shredded lettuce, shredded cheese, and a dollop of sour cream.

    Drizzle with tres chiles salsa over the top or serve on the side for dipping. Enjoy your delicious flautas!
