Fry the Tortilla Chips
Cut corn tortillas into triangles. In a large frying pan, heat vegetable oil over medium heat. Add the tortilla pieces in batches and fry until they are golden brown and crispy, about 3-4 minutes. Remove and drain on paper towels, and set aside.

Combine Chips and Salsa
In a large skillet over medium heat, add the fried tortilla chips and pour the salsa verde over them. Toss gently to coat the chips with the salsa and cook for another 2-3 minutes until everything is heated through.

Serve the Chilaquiles
On a serving plate, place the salsa-coated tortilla chips. Top with Monterey Jack cheese, sour cream, diced small onion, chopped cilantro, and place the cooked eggs on top. Serve immediately.
