Cook for about 6-7 minutes on each side until the chicken is cooked through and no longer pink in the center. Remove from heat and let it rest.

    In the same skillet, add another tablespoon of olive oil if necessary. Add the sliced bell peppers and onions. Sauté for about 3-4 minutes until they are softened and slightly caramelized. Remove from heat.

    Once the chicken has rested, shred it using two forks or chop it into bite-sized pieces.
