For the Birria Beef

    Prepare the Chiles

    Remove the stems and seeds from the guajillo and ancho chiles. In a dry skillet over medium heat, toast the chiles for about 2-3 minutes until fragrant. Transfer to a bowl and cover with hot water to soak for 15 minutes.

    Blend the Marinade

    In a blender, combine the soaked chiles, onion, garlic, cumin seeds, oregano, black peppercorns, and salt. Blend until smooth, adding a little soaking water if necessary.

    Brown the Beef

    In a large pot or Dutch oven, heat vegetable oil over medium-high heat. Cut the chuck roast into large chunks and brown them on all sides (about 5-7 minutes). Remove the beef and set aside.

    Braised the Beef

    Add the blended marinade to the pot and cook for 5 minutes. Return the beef to the pot along with the bay leaves and beef broth. Bring to a boil, then reduce to a simmer. Cover and cook for 3-4 hours until the beef is tender and shreds easily.

    Prepare the Avocado-Tomatillo Salsa

    In a blender, combine chopped avocado and tomatillos. Blend until smooth, adding salt to taste.

    Prepare the Crispy Potato Strings

    Peel and julienne the potatoes. Rinse in cold water and pat dry. In a deep skillet, heat oil over medium-high heat. Fry the potato strings until golden and crispy, about 3-4 minutes. Drain on paper towels and season with salt.

    Assemble the Tacos

    Warm the corn tortillas on a skillet. Fill each tortilla with shredded birria beef, diced red onion, and chopped cilantro. Top with avocado-tomatillo salsa and crispy potato strings.

    Plate the Dish

    Serve the tacos alongside Mexican rice and refried beans on the side.
