Chowder Preparation

    Sauté Vegetables

    In a large pot, melt the butter over medium heat. Add the chopped onion, celery, and carrots, and sauté until the vegetables are soft, about 5-7 minutes. Add the minced garlic and sauté for an additional 1-2 minutes.

    Add Potatoes and Stock

    Stir in the diced potatoes, fish stock (or clam juice), bay leaves, salt, and black pepper. Bring to a boil, then reduce the heat and simmer for about 15 minutes, or until the potatoes are tender.

    Incorporate Seafood

    Add the heavy cream, shrimp, scallops, and white fish to the pot. Stir gently to combine and cook for an additional 5-7 minutes, or until the seafood is cooked through.

    Serve

    Remove bay leaves. Ladle the chowder into bowls and garnish with fresh parsley. Serve hot.
