Make the Dough
In a large bowl, combine the flour, sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in ice water, a tablespoon at a time, until the dough comes together.

Chill the Dough
Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.

Roll Out the Dough
On a floured surface, roll out the chilled dough to about 1/8 inch thickness.

Cut and Shape Pastries
Use cookie cutters or a knife to cut the dough into desired shapes. Fill with sweet fillings such as fruit preserves, chocolate, or cream cheese.

Bake the Pastries
Preheat your oven to 375°F (190°C). Place the pastries on a baking sheet and bake for 20-25 minutes, or until golden brown.

Cool and Serve
