Ice Cream Base

Method

Preparation

  1. 1

    Combine Ingredients

In a medium saucepan, combine the whole milk, heavy cream, and granulated sugar. Heat over medium heat, stirring until the sugar dissolves.

  2. 2

    Prepare the Egg Mixture

In a separate bowl, whisk together the egg yolks and cornstarch until smooth.

  3. 3

    Temper the Egg Mixture

Once the milk mixture is hot (but not boiling), gradually whisk it into the egg yolk mixture to temper the eggs.

  4. 4

    Cook the Base

Return the combined mixture to the saucepan and cook over medium heat, stirring constantly until the mixture thickens and coats the back of a spoon (about 5-7 minutes).

  5. 5

    Cool and Add Flavors

Remove from heat and stir in the vanilla extract and a pinch of salt. Allow the mixture to cool to room temperature, then refrigerate for at least 2 hours.

  6. 6

    Churn the Ice Cream

Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

  7. 7

    Serve

Serve immediately for soft serve, or transfer to a container and freeze for a firmer texture.
