    Gather all the ingredients and chop the vegetables as needed.

    Cook the Vegetables

    In a large pot, melt the butter over medium heat. Add the onion, celery, and carrots, and sauté for about 5 minutes until softened.

    Add Potatoes and Flour

    Stir in the diced potatoes and cook for another 5 minutes. Sprinkle the flour over the mixture and stir well to combine.

    Cut the cod fillets into bite-sized pieces and add them to the pot along with the heavy cream, thyme, salt, and pepper. Cook for an additional 10 minutes, until the fish is cooked through.
