Method

Directions

  1. 1

    Prepare the Clams

Rinse the clams under cold water and scrub the shells to remove any dirt.

  2. 2

    Cook the Bacon

In a large pot, cook the bacon over medium heat until crispy. Remove the bacon, crumble it, and set aside, leaving the bacon fat in the pot.

  3. 3

    Sauté Vegetables

Add butter to the bacon fat in the pot. Sauté the diced onion and celery until translucent, about 5 minutes.

  4. 4

    Add Potatoes and Broth

Add the diced potatoes, chicken broth, salt, black pepper, and thyme. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15 minutes.

  5. 5

    Add Clams and Cream

Add the prepared clams and heavy cream to the pot. Simmer for an additional 5-10 minutes until the clams are cooked and opened.

  6. 6

    Finish the Chowder

Stir in the crumbled bacon and chopped parsley. Adjust seasoning with salt and pepper to taste.

  7. 7

    Serve

Ladle the chowder into bowls and serve hot. Enjoy!
