    Prepare the Vegetables

    Preheat the oven to 350°F (175°C). Peel and dice the potatoes. Chop the onion and celery.

    Cook the Potatoes

    In a pot, boil the diced potatoes until tender, about 10 minutes. Drain and set aside.

    Make the Sauce

    In a skillet, melt the butter over medium heat. Add the onion and celery, cooking until softened. Stir in the flour and cook for 1 minute. Gradually whisk in the milk, cooking until thickened. Remove from heat and stir in salt, black pepper, and paprika.

    Combine Ingredients

    In a large bowl, combine the haddock fillets, cooked potatoes, and sauce. Mix gently to coat the fish and potatoes.

    Add Cheese

    Transfer the mixture to a greased casserole dish. Sprinkle cheddar cheese on top.

    Bake in the preheated oven for 25-30 minutes, or until the fish is cooked through and the top is golden.
