    Prepare the Fries

    Start by preparing the French fries.

    Peel the russet potatoes and cut them into thick strips. Rinse them in cold water to remove excess starch, then pat dry with a towel.

    Heat vegetable oil in a deep fryer or a large pot to 350°F (175°C). Fry the potatoes in batches for about 5-7 minutes or until golden brown. Remove and drain on paper towels. Season with salt to taste.

    Prepare the Haddock

    Now, prepare the haddock fillets.

    In a bowl, mix together the flour, cornstarch, baking powder, salt, and black pepper.

    Gradually whisk in the beer (or sparkling water) until the batter is smooth.

    Dip each haddock fillet into the batter, allowing excess to drip off.

    Fry the battered haddock in hot oil for about 4-5 minutes or until golden brown and cooked through. Remove and drain on paper towels.
