    Make the Tart Shell

    In a mixing bowl, combine the flour, sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs. Add the egg yolks and mix until a dough forms. Wrap in plastic wrap and refrigerate for 30 minutes.

    Bake the Tart Shell

    Preheat the oven to 350°F (175°C). Roll out the dough on a floured surface and fit it into a 9-inch tart pan. Prick the bottom with a fork and bake for 20-25 minutes or until golden. Let it cool completely.

    Prepare the Pastry Cream

    In a saucepan over medium heat, combine the milk and vanilla extract. In a separate bowl, whisk together the egg yolks, sugar, and cornstarch. Gradually pour the hot milk mixture into the egg mixture, whisking constantly. Return to the saucepan and cook over medium heat, stirring until thickened. Remove from heat and let it cool.

    Assemble the Tart

    Once the tart shell is cool, fill it with the pastry cream. Arrange sliced fresh seasonal fruits on top of the cream. Refrigerate for at least 1 hour before serving.
